{Zucchini Bread}

Ingredients:

3 c. flour

1 1/2 c. sugar

1 t. cinnamon

1 t. salt

1 t. baking powder

3/4 t. baking soda

2 c. shredded peeled or unpeeled zucchini

1 c. nuts {optional}

1 c. raisins {optional}

3 eggs

1 c. cooking oil


Directions:

Preheat oven to 350°. In a large bowl, combine all ingredients except eggs and oil. In another bowl, beat eggs and oil together then pour over flour mixture. Stir till moistened, Turn into greased 9 x 5 x 3" loaf pan. Bake at 350° for 90 minutes or until toothpick comes out clean and dry. Cool in pan for 10 minutes and then remove. Refrigerate when completely cooled. Can be wrapped in foil and frozen. **If baking in a glass dish, reduce oven temperature to 325°.
